Ingredients :
- 100 g flour
- 2 eggs
- 2 tbsp Honey
- 20 g cane sugar
- 50 ml water
- 1/2 tsp baking soda
- 150 g Red bean paste
- 1 egg yolk (for custard)
- 10 g sugar (for custard)
- 1 tbsp corn flour
- 100 ml milk
- 2 tbsp Green tea powder
Method :
- First, let"s work on the Green tea custard. Transfer the egg yolk into a mixing bowl. Add in sugar, mix well. Then add corn flour and green tea powder, mix well.
- Warm the milk in medium heat until it starts boil. Carefully add in milk into the egg yolk mixture little by little. Mix well.
- Transfer mixture 2 back into the saucepan. Heat the mixture in medium heat. Keep mixing the custard while heating. The custard should be thicken while heating. (This usually takes 7-9mins)
- When the custard is ready, transfer them into a plate and cover with plastic wrap. Cool it in the fridge for at least 2 hours.
- Now, let"s work on the pancakes of dorayaki. Put eggs in a mixing bowl and gently mix the eggs. Add in cane sugar and mix well until all sugar is dissolved.
- Now sieve in flour and baking soda into the egg mixture. Mix well until just combined. Do not over mix!
- Now dissolve honey in water. Add the water mixture in the egg mixture and mix well. Leave the mixture in the fridge for 30-40mins before frying.
- Heat the frying pan in medium heat. Put 2 table spoon of pancake mixture on to the frying pan. When there are small bubbles formed on the surface on the pancake, carefully flip the over the pancake and brown the other side. Repeat the step until you use all the mixture.
- Let the pancake to cook completely before putting the fillings.
- Put in enough amount of red bean paste and green tea custard into the one of pancake. Cover with another pancake. Gently press it the finish.
