Ingredients :
- 1 c Quinoa, soaked 2-6hrs and rinsed
- 1 tbsp EVOO
- 1/2 c Nuts and Seeds of your choice
- 1/2 dried Fruit of your choice
- 1 tbsp Maple Syrup or 1 1/4 tsp Truvia
- 1/2 tsp finely grated Orange Zest
- 1 tsp ground Cinnamon
- Pinch Salt
- 1/2 can Coconut Milk
Method :
- In a medium sauce pan, add 2 cups water and bring to a boil. Add soaked and rinsed quinoa and reduce heat to a simmer. Cover and cook for 12 -15 minutes, fluff with a fork.
- In a medium pan, heat olive oil. Add the nuts and seeds and cook over medium heat, stirring a few times until the nuts become fragrant and slightly browned, about 2 minutes. Add the fruit, maple syrup, orange zest, cinnamon, salt and coconut milk. Stir to combine and heated through
- Add the mixture to the quinoa and stir to coat. Consider topping with ricotta or Sweet Cashew Cream Cheese
