Recipe Sweet Breakfast Quinoa

Ingredients :

  • 1 c Quinoa, soaked 2-6hrs and rinsed
  • 1 tbsp EVOO
  • 1/2 c Nuts and Seeds of your choice
  • 1/2 dried Fruit of your choice
  • 1 tbsp Maple Syrup or 1 1/4 tsp Truvia
  • 1/2 tsp finely grated Orange Zest
  • 1 tsp ground Cinnamon
  • Pinch Salt
  • 1/2 can Coconut Milk

Method :
  1. In a medium sauce pan, add 2 cups water and bring to a boil. Add soaked and rinsed quinoa and reduce heat to a simmer. Cover and cook for 12 -15 minutes, fluff with a fork.
  2. In a medium pan, heat olive oil. Add the nuts and seeds and cook over medium heat, stirring a few times until the nuts become fragrant and slightly browned, about 2 minutes. Add the fruit, maple syrup, orange zest, cinnamon, salt and coconut milk. Stir to combine and heated through
  3. Add the mixture to the quinoa and stir to coat. Consider topping with ricotta or Sweet Cashew Cream Cheese
