Ingredients :
- 16 oz white or cremini whole mushrooms
- 2 pitted and peeled avocados
- 1-3 cloves garlic
- 2 tablespoons oil of your choice
- 2 lemon wedges
- 2 oz plain Greek yogurt
- Optional: salt, pepper, any other seasonings you think you'll like
- Optional: Crushed nuts, the finer the better
- Optional: Onions or other vegetables to add extra flavor and crunch
Method :
- Pre heat the oven to 325 degrees. Wash mushrooms. Remove stems. Dip and cover in oil. Place on a baking sheet or dish, de-stemmed side up.
- Pop in fully heated oven for twenty minutes.
- Put left over oil in pan. Slice garlic cloves evenly and sauté over medium heat until fragrant. Take away from heat and let cool.
- Put peeled and pitted avocados in blender. Add the plain Greek yogurt. Add the garlic and left over oil. Add the lemon juice. At this time you can add salt and pepper or any other desired seasoning to taste. Process until smooth.
- Once the avocado mixture is smooth and the mushroom caps have cooked for 20 minutes take the mushroom caps out of the oven. Fill them with a little dollop of the avocado mixture so that the mixture goes evenly between all the mushroom caps. Sprinkle with crushed nuts. Pop back into oven for 10 - 15 minutes. Serve.
