Ingredients :
- 4 Large Tomatoes
- 3/4 cup Grated Mozzarella cheese
- 3-4 tablespoons Grated Parmesan cheese
- 2 tablespoons Chili flakes
- 1 tablespoon Dried Oregano & Basil
- 1 teaspoon Minced garlic
- to taste Salt
- 1 teaspoon Sugar
- ****
- For the batter :
- 2 Eggs
- 4 tablespoons Cornflour
- 2 tablespoons Rice flour
- to taste Salt and pepper
- Oil for deep frying
Method :
- Slice the tomatoes into rings, neither too thick nor too thin. 4 tomatoes should yield about 30-32 rings.
- Now take two tomato rings. Place a generous amount of the cheese mix on one ring and cover with the other slice, like a sandwich.
- Prepare the batter by beating the eggs well and then whisking in the cornflour and rice flour along with the salt and pepper. The batter wont be to thick.
- Heat oil in a pan. Dip each tomato cheese into the batter and ease into the oil once its ready. Fry until a beautiful golden, on medium - medium low heat. Turn up the heat while taking the fritters out of the oil.
