Resep Margherita Fritters: Batter-fried Tomato & Mozzarella Rings

Ingredients :

  • 4 Large Tomatoes
  • 3/4 cup Grated Mozzarella cheese
  • 3-4 tablespoons Grated Parmesan cheese
  • 2 tablespoons Chili flakes
  • 1 tablespoon Dried Oregano & Basil
  • 1 teaspoon Minced garlic
  • to taste Salt
  • 1 teaspoon Sugar
  • ****
  • For the batter :
  • 2 Eggs
  • 4 tablespoons Cornflour
  • 2 tablespoons Rice flour
  • to taste Salt and pepper
  • Oil for deep frying

Method :
  1. Slice the tomatoes into rings, neither too thick nor too thin. 4 tomatoes should yield about 30-32 rings.
  2. Now take two tomato rings. Place a generous amount of the cheese mix on one ring and cover with the other slice, like a sandwich.
  3. Prepare the batter by beating the eggs well and then whisking in the cornflour and rice flour along with the salt and pepper. The batter wont be to thick.
  4. Heat oil in a pan. Dip each tomato cheese into the batter and ease into the oil once its ready. Fry until a beautiful golden, on medium - medium low heat. Turn up the heat while taking the fritters out of the oil.
