Ingredients :
- 1/2 tbsp butter
- 1 tbsp sour cream
- 1/2 tsp chopped fresh dill
- 1 egg
- 2 slices smoked salmon (4 oz)
- to taste Salt and freshly ground pepper
Method :
- Preheat oven to 350 degrees F. Butter a single-serving oven-proof custard dish. Add the sour cream and spread it to make an even layer. Add the chopped fresh dill. Break the egg into the dish, centering the yolk.
- Place the custard dish in the centre of a pie plate. Carefully pour warm water into the pie plate until it reaches half an inch up the side of the custard dish.
- Place in the oven and bake for 15-20 minutes or until the yolk is set to your preference.
- Remove from the oven; place the custard dish on a rack and let sit for 1 minute. Place the smoked salmon on a breakfast plate. Run a knife around the edge of the baked egg and holding the custard dish with a pot holder (it will be hot), tip the egg out onto the smoked salmon. Season to taste with salt and pepper.
