Recipe Broiled Tomatoes

Ingredients :

  • 4 large ripe tomatoes
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • 1 garlic clove, minced
  • 1/2 c grated Parmesan cheese
  • 4 tbsp butter, cubed
  • 1/4 c fresh chopped flat leaf parsley

Method :
  1. Preheat broiler. Wash the tomatoes, and halve each, cutting through the stem end. Set on paper towels, but side down, for about 20 minutes.
  2. Place the tomatoes, cut side up, in a shallow casserole dish. Brush the tops with olive oil. Season with salt, pepper and garlic. Sprinkle with cheese, and dot with butter. Sprinkle with chopped parsley.
  3. Place the baking dish under the broiler until the cheese is bubbly and browned, approximately 3 minutes. Watch closely so as not to burn! Serve immediately. (132 calories/serving; GL=1, Glycals=1)
