Ingredients :
- 4 large ripe tomatoes
- 2 tbsp olive oil
- to taste Salt and pepper
- 1 garlic clove, minced
- 1/2 c grated Parmesan cheese
- 4 tbsp butter, cubed
- 1/4 c fresh chopped flat leaf parsley
Method :
- Preheat broiler. Wash the tomatoes, and halve each, cutting through the stem end. Set on paper towels, but side down, for about 20 minutes.
- Place the tomatoes, cut side up, in a shallow casserole dish. Brush the tops with olive oil. Season with salt, pepper and garlic. Sprinkle with cheese, and dot with butter. Sprinkle with chopped parsley.
- Place the baking dish under the broiler until the cheese is bubbly and browned, approximately 3 minutes. Watch closely so as not to burn! Serve immediately. (132 calories/serving; GL=1, Glycals=1)
