Ingredients :
- 1 bunch Linguine
- 1 large carrot
- 1 tbsp ricotta cheese
- 1 tsp garlic butter
- Dash salt
- 1/2 tsp chicken stock (powder)
- to taste Ground ginger
- Arugula, or any kind of hearty flavoured greens
Method :
- Put on a saucepan of water to boil first
- Clean, peel, and chop carrots into thick slices.
- Put linguine and carrots into the water and cook on medium heat for about 15 minutes.
- Drain pasta and carrots, and separate out the carrots. Place carrots, ricotta, ground ginger, chicken stock, and garlic butter into a food processor.
- Blend until smooth
- Spoon over pasta and garnish with lots of greens! Enjoy
