Ingredients :
- 2 lbs Beef Roast
- 1 medium sized cinnamon stick
- 3 tbsp ground cumin
- 2 red gala apples sliced core and skin removed
- 4 celery stalks chopped
- 2 potatoes cut into large cubes
- 4 sprigs fresh thyme
- 5 cloves garlic
- 1 whole yellow onion minced
- to taste salt
- fresh cracked peppercon
- Dutch Oven
Method :
- I cook this in a Dutch Oven partially on stove top and finish in the oven.
- Begin by heating(stovetop) olive oil in dutch oven on low heat. Add the garlic cloves, onions and celery allow to sautee in oil until onions become transparent.
- Add the meat and turn up the heat to a medium flame to sear meat.
- Once meat has browned add potatoes, apples, thyme, cumin, salt, pepper and cinnamon stick. Stir ingredients in. Cover and cook for 15 minutes. Preheat oven to 350° while waiting.
- Once oven has reached 350° carefully place dutch oven(covered) in oven and allow to cook 1 hr. While you wait help yourself to a cold refreshing beverage of your choice.. Mine is a Corona with salt and lime lol
- Once the dish is done take out of oven and place on stove top, remove lid partially (remove and discard cinnamon stick) allow to cool for 15 -20mins juices will thicken. Serve in bowls and enjoy :) Bon Appetit
