Recipe Roasted Garlic Hummus

Ingredients :

  • 1 bulb garlic
  • 1 (15 oz) can garbanzo beans
  • 3 T EVOO
  • 1 T tahini
  • 1 lemon (zested)
  • 1/2 lemon (juiced)
  • 1/4 t cumin
  • kosher salt
  • freshly ground black pepper
  • 1 t pine nuts (coarsely chopped, toasted)

Method :
  1. Preheat oven to 400°F.
  2. Peel some of the loose outer leave of the garlic bulb Cut 1 quarter off the top of the bulb exposing the cloves.
  3. Wrap garlic in foil. Place directly on middle rack of oven and bake until cloves feel soft when pressed. 30-35 mins. Set aside until cool enough to handle.
  4. Squeeze garlic into food processor. Add beans, oil, tahini, lemon zest and juice, cumin 1/4 t salt, 1/4 t black pepper. Process until smooth. If too thick add 1 T of warm water.
  5. Sprinkle with pine nuts and serve with HOMEMADE PITA CHIPS.
