Ingredients :
- 1 bulb garlic
- 1 (15 oz) can garbanzo beans
- 3 T EVOO
- 1 T tahini
- 1 lemon (zested)
- 1/2 lemon (juiced)
- 1/4 t cumin
- kosher salt
- freshly ground black pepper
- 1 t pine nuts (coarsely chopped, toasted)
Method :
- Preheat oven to 400°F.
- Peel some of the loose outer leave of the garlic bulb Cut 1 quarter off the top of the bulb exposing the cloves.
- Wrap garlic in foil. Place directly on middle rack of oven and bake until cloves feel soft when pressed. 30-35 mins. Set aside until cool enough to handle.
- Squeeze garlic into food processor. Add beans, oil, tahini, lemon zest and juice, cumin 1/4 t salt, 1/4 t black pepper. Process until smooth. If too thick add 1 T of warm water.
- Sprinkle with pine nuts and serve with HOMEMADE PITA CHIPS.
