Ingredients :
- 1 1/2 kg braising steak
- Lardons
- 6 carrots (2 cm chunks)
- 2 large onions (2 cm chunks)
- 3 cloves garlic
- 2-3 Bay leaves
- Thyme
- Chopped Parsley
- 10 Shallots
- Button mushrooms
- 1 1/2 bottles red wine
Method :
- Brown the steak and bacon and transfer to another dish. Swear down the carrots, onions and garlic until soft. Return the steak and bacon to the pan adding that bay and thyme (stems and all).
- Add all the wine to the pan as well as the shallots (whole). Bring to the boil and leave to simmer for 10 minutes. Transfer to the oven at 150 degrees and leave for as long as possible (min. 2 hours).
- Add the mushrooms for the last hour of cooking. Remove the bay leaves and thyme stems once cooked. Season well and stir in the chopped parsley. Serve with creamy mash potato and braised red cabbage and a large glass of red wine.
