Ingredients :
- 1 lb boneless skinless chicken, diced (very small pieces)
- 2 tbsp sesame seed oil, divided
- 1 can water chestnuts, drained
- 1 tbsp ground ginger
- 1 bell pepper, diced
- 1 onion, diced
- 2 tbsp rice vinegar
- 2 tbsp teriyaki sauce, low sodium
- 3 tbsp soy sauce, low sodium
- 1/2 tsp garlic powder
- 1/4 tsp red pepper
- 1 bunch green onions, sliced
- 1/2 cup shredded carrots
- 1/4 cup pine nuts
- 1-2 heads bibb lettuce
Method :
- Add water chestnuts, ginger, bell pepper and onion. Cook and stir over medium heat until chicken is cooked through.
- Add rice vinegar, teriyaki sauce, soy sauce, garlic powder, red pepper, green onions, carrots, and remainder of sesame seed oil to mixture. Cook and stir for a few minutes.
