Ingredients :
- 2 (8 oz) Chicken breasts, boneless, skinless, butterflied
- 2 oz cream cheese, fat-free, sliced
- 4 oz cheddar cheese, fat-free, sliced
- 1 egg white, sligtly beaten
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 2/3 cup panko
- 1/4 cup parmesan cheese, grated
- 1/2 tsp garlic salt
- 1/2 tsp paprika
Method :
- Unfold butterflied chicken breast place a slice of cream cheese and cheddar cheese on one side of each breast and fold back together.
- In a shallow bowl, mix minced garlic with egg white and lemon juice.
- In a separate shallow bowl mix the panko, parmesan cheese, garlic salt and paprika.
- Dip chicken in egg mixture than coat with breading mixture. Place in prepared pan and bake for 30-40 minutes or until chicken juices run clear.
