Ingredients :
- 2 whole mackerels
- 100 ml water #
- 200 ml sake #
- 2 Tbsp mirin/sweet sake #
- 2 Tbsp soy sauce #
- 1 few pieces ginger #
- 2 tsp sugar *
- 1 Tbsp mirin/sweet sake *
- 2 Tbsp miso *
- leek/green onions, as you wish
Method :
- Remove the head and innards from the mackerels and wash with water. Dry with kitchen paper. Make a cross cut on both sides.
- Put all the # ingredients into a pot. Once it boils, put in the mackerel with lid on. Boil for a while on a medium to high heat. Occasionally shake the pot to ensure the mackerels are covered with sauce.
- While boiling the mackerel, make the miso sauce. Mix all * ingredients well.
- When the sauce is nearly gone, and the mackerels are well cooked, pour the miso sauce on the mackerels and shake the pot to cover everything. Once it comes to a boil again, it"s done!
- You can garnish with Japanese leeks or green onions.
