Ingredients :
- For Meatballs
- 1 1/2 pounds ground pork
- 1 large egg, lightly beaten
- 4 green onions, finely chopped
- 1/4 teaspoon ground ginger
- 2 garlic cloves minced
- 1 1/2 teaspoon tamari soy sauce
- 1/2 teaspoon sriracha hot sauce
- 1/4 teaspoon black pepper
- 2 tablesoons fresh lime juice
- For Glazing the Meatballs
- 1/4 cup sweet chili sauce
- For Cole Slaw
- 12 to 14 ounce bag asian slaw mix
- 2 tablespoons thai basil, chopped
- 2 green onion chopped or thin sliced
- 1/4 cup seasoned rice vinegar
- 1 teaspoon sriracha hot sauce
- to taste salt and pepper
- 2 tablespoons real mayonnaise
- For Serving
- individual sturdy lettece cups, iceburg works well or a double thickness of bibb lettece
Method :
- Preheat the oven to 400. Line a baking sheet with foil
- Combine all meatball ingredients in a bowl and mix gently to completely incorporate, mixture will be wet
- Roll into small 1/2 inch balls and place on prepared pan and cook 15 to 18 minutes until cooked through.
- When the are done place them in a bowl and gently and lightly coat them with the sweet chili sauce
- For Cole Slaw
- Combine all cole slaw ingedients in a bowl and mix to blend
- To serve
- Add some cole slaw to each lettece wrap
- Add a few meatballs and a squeeze of fresh lime juice and serve
