Ingredients :

- 2 Pounds Beef Bones With Marrow
- as needed Fresh Ground Black Pepper
- as needed Garlic Infused Olive Oil
- as needed Worshestershire Sauce
- as needed Granulated Garlic
- as needed Granulated Onion
- as needed Dried Rosemary
- as needed Dried Chives
- as needed Sea Salt
- as needed Baguette Bread [thin sliced]
- ● For The Chilled Parsley Salad
- 2 Cups Fresh Parsley [+ reserves for garnish]
- as desired Chilled Fine Chopped Green Onions
- Dash Lemon Juice [+ wedges for serving]
- 1 Pinch Fresh Ground Black Pepper
Method :
- Preheat oven to 450°.
- Believe it or not, this is easily enough marrow to serve 20 + for under $20.00.
- Rinse your bones as there will be bone shards and slivers. Pat them dry.
- Drizzle a very limited amount garlic infused olive oil at the bottom of your oven safe pan. Just enough to keep anything from sticking. You can even smear olive oil on a paper towel and simply wipe your pan. Trust me, your bone marrow alone will produce copious amounts of fats/oils.
- Lightly sprinkle olive oil with dried chives, dried rosemary, granulated garlic, granulated onion, sea salt and fresh ground black pepper to taste.
- Place bones in your oven safe pan and repeat step # 4.
- Drizzle your beef bone tops with Worshestershire Sauce.
- Lightly coat your thin sliced baguette bread with butter or olive oil [on both sides] and toast in the same oven until crispy. Usually about 3 minutes. You"ll definitely want some crisp on your crostinis to absorb all of that delicious marrow fat!
- Bake bones at 450° for 7 to 15 minutes depending upon size and depth of your bones. You"ll know they"re done when the marrow bubbles at the edges within the bones. Don"t over bake or the marrow can easily slip through the bone prior to serving.
- While waiting, create your simple chilled parsley salad. This parsley, lemon, green onion salad is meant to cut the richness of the marrow fat. Trust me. You"ll definitely want it. ;0) Rough chop chilled parsley, add lemon juice to taste, pepper and a very slight drizzle of olive oil and mix. Serve chilled.
- Garnish bones with fresh parsley and serve with lemon wedges.
