Ingredients :
- 3 lb chicken wings, separated (approx. 24 pieces)
- 12 slices thick cut bacon, halved and stretched
- to taste Black pepper
- Pink salt, to dry the wings while sitting
Method :
- Air-dry the wings. While you wait, crush the salt and pepper together with a mortar and pestle.
- When the wings are dry, toss them lightly in the crushed salt and pepper.
- Once dusted, place on a rack to dry.
- Pre-heat oven to 450 degrees F.
- Wrap a slice of bacon diagonally around each winglet.
- Place on a rack, wrapped side down.
- Place inside oven and bake for 35 minutes.
- Flip over and bake another 35 minutes, watching carefully for scorching, until other side has identical crispness.
- Remove from oven and drizzle with salad dressing/sauce of choice.
