Ingredients :
- 900 grams heavy cream
- 200 ml milk
- 90 grams glucose
- 1100 grams chocolate 58%
Method :
- Put the chocolate on a large bowl ( if the chocolate comes on a bar, chop it into small pieces)
- Bring the milk cream and glucose to simmer
- Pour the hot liquids into the chocolate and cover, let it rest for 2 minutes then mix it until the chocolate is completely melted
