Ingredients :
- 1/4 c butter, coconut oil or EVOO
- 1 med yellow onion, chopped
- 2 cloves garlic, minced
- 4 c chicken stock
- 1 lb fresh or frozen broccoli florets
- 1 can (14 oz) coconut milk
- 1 tsp sea salt
- 1/4 tsp black pepper
Method :
- In a large pot, heat butter or oil. Cook onion and garlic until onion is translucent.
- Increase heat and add stock. Bring to a boil, then reduce heat to medium.
- Add broccoli, coconut milk, salt and pepper. Cook for 5 minutes, stir occasionally, or until broccoli is soft.
- Pour into blender and blend until smooth or blend in the pot with an immersion blender.
