Ingredients :
- BEEF STIR FRY
- 1 cup orange juice
- 2 tsp toasted sesame oil
- 2 garlic cloves (chopped)
- 5 tbsp olive oil
- 2 lbs flank steak (cut into 1/2 inch strips)
- 1 tbsp cornstarch
- 1 red onion (thinly sliced)
- 2 tsp curry powder
- 2 tomatoes (chopped)
- 2 tbsp soy sauce
- salt and pepper
- 1 tbsp chopped parsley
- BROCCOLINI
- 2 cups chopped broccolini (1 bunch)
- 2 tbsp olive oil
- 1/2 red onion (sliced)
- 1 (2 inch) piece ginger (peeled and minced)
- 2 garlic cloves (chopped)
- 1 tbsp sesame seeds
- 2 tsp curry powder
- 2 tsp tomato paste
- 2 tbsp soy sauce
- juice of 1 lime
- 2 tsp toasted sesame oil
- 2 tbsp rice wine vinegar
- 2 scallions ( bottoms, chopped )
- salt and pepper
Method :
- BEEF STIR FRY
- Combine orange juice, sesame oil, and 2 tbsp olive oil in a large bowl
- Add flank steak and turn to coat. Cover with plastic wrap and refrigerate for at least 20 minutes
- Strain marinade from steak, reserving 2 tbsp. Mix reserved marinade with cornstarch in a small bowl, and set aside.
- Heat remaining 3 tbsp olive oil in wok or large saute pan. Add onion and curry powder and saute until translucent, about 3 minutes.
- Add flank steak, saute until browned, about 5 minutes
- Add marinade mixture, tomatoes, and soy sauce. Bring to a boil and cook until sauce thickens, about 1 minute.
- Remive from heat and add parsley. Season with salt and pepper, serve with broccolini
- BROCCOLINI
- Bring pot of salted water to boil
- Add broccolini, and simmer for 1 minute.
- Strain and rinse with cold water
- Heat olive oil in a large saute pan over medium heat. Add onion and saute until translucent, about 3 minutes.
- Add ginger, garlic, sesame seeds, curry powder, and tomato paste. Saute for 2 minutes.
- Add broccolini, soy sauce, lime juice, sesame oil, vinegar, and scallions. Stir until heated through, about 2 minutes. Season with salt and pepper.
