
Ingredients :
- brine
- 1 cup kosher salt
- 2 1/4 cup sugar
- 1/4 cup turmeric
- 1 gallon water
- 1/2 cup distilled white vinegar
- 1/4 cup onion powder
- 1/4 cup granulated garlic powder
- 1/4 cup paprika
- 1 cup margarine
- 1 gallon water
- chicken
- 40 lb chicken
- cooler
- 1 large cooler
- 1 ice
Method :
- In a large pot add water, sugar, salt, turmeric, garlic, vinegar, margarine, paprika, and onion powder. Bring to a boil, turn off heat let cool completely. This is the concentrated brine.
- Add chicken to a sanitized cooler or line cooler with a bag, pour brine over the chicken. Add 1 gallon of water to the concentrated brine. Stir occasionally about every 2 hours checking temperature. Add ice to keep the temperature at 45° Fahrenheit. 7.222° Celsius.
- Next day preheat oven 400° Fahrenheit. Bake in batches if needed bake till done, cooking same parts of chicken in each pan like all thighs, or all legs. discard the brine. Serve hope you enjoy!
