Ingredients :
- 150 g Beef - Breakfast Steak cut or Sukiyaki cut
- 2 stalks celery, sliced crosswise
- 1 Red Onion, chopped
- 3 cloves Garlic, minced
- 1 Thumb of Ginger, minced
- 1 stalk Leeks, sliced crosswise
- 2 cups water
- 1/4 Beef broth cube
- 1 block Tofu, cubed
- 1-2 Tbsp Miso paste
- Few leaves of Coriander
- to taste Nori strips
- Cooking oil
- to taste Salt & pepper
- 1 Bay leaf (optional)
- Garnish (optional)
Method :
- Sauté garlic, onions, ginger in pot with a little oil.
- Slice beef into crosswise strips.
- Add to the pot once onions are translucent. Mix in.
- Season with salt and ground black or white pepper.
- Add sliced leeks.
- Include the green leaves, they are delicious in soups. And they will cook thoroughly.
- Pour the water in. Add the celery, tofu, and beef broth cube.
- Add the fresh miso paste. It"s up to you how much you want to put in. Freeze the rest for another time.
- Stir. Simmer until tofu cooks and let the flavors come out.
- Add a small bay leaf if you like it"s flavour. (Optional)
- Add the coriander leaves and cut up nori strips.
- Adjust taste accordingly with salt or a little more beef broth cube.
- Let simmer for another 10 minutes.
- Then serve while hot. Garnish with a few scallions on top (optional).
