Ingredients :
- 1 can (15.5 oz) Black beans
- 1 can (10 oz) diced tomatoes with chilies
- 1 can corn, drained
- 1 pkg (1 oz) chipotle taco seasoning
- 1 jalapeno pepper, diced
- 1 tbsp oil
- 1/4 onion, diced
- 1 glove minced garlic
- 7 6" corn tortillas
Method :
- In a skillet add the oil. When hot add the corn, pepper and onion till corn is lightly browned
- Add the rest of the ingredients and cook until heated through, about 5 minutes, being careful not to mash the beans
- Finally serve on warmed corn tortillas with a squeeze of lime.
- Serve with chopped onions, cilantro, shredded lettuce, diced tomatoes, cotija or favorite shredded cheese, sour cream, salsa, any toppings that you like.
- Serve with a side of Mexican rice
