Recipe Borscht

Ingredients :

  • 1.5 c thin sliced potatoes
  • 1 c thin sliced beets
  • 4 c veg stock or water
  • 2 T butter
  • 1.5 c chopped onions
  • 1 t caraway seed
  • 2 t salt
  • 1 celery stalk
  • 1 large carrot
  • 3 c coarse chop red cabbage
  • 1/4 t fresh dill
  • 1 T cider vinegar
  • 1 T honey
  • 1 c tomato puree
  • sour cream and chopped tomato garnish

Method :
  1. Cook potatoes, beets in stock on high boil till tender
  2. Remove veg, reserve stock
  3. In butter clarify onions worth salt, caraway
  4. Add stock, celery, carrot, cabbage
  5. Cook 10 min till tender
  6. Add potatoes, beets, pepper, dill, vinegar, honey, tomato
  7. Simmer 30 minutes
