Ingredients :
- 1.5 c thin sliced potatoes
- 1 c thin sliced beets
- 4 c veg stock or water
- 2 T butter
- 1.5 c chopped onions
- 1 t caraway seed
- 2 t salt
- 1 celery stalk
- 1 large carrot
- 3 c coarse chop red cabbage
- 1/4 t fresh dill
- 1 T cider vinegar
- 1 T honey
- 1 c tomato puree
- sour cream and chopped tomato garnish
Method :
- Cook potatoes, beets in stock on high boil till tender
- Remove veg, reserve stock
- In butter clarify onions worth salt, caraway
- Add stock, celery, carrot, cabbage
- Cook 10 min till tender
- Add potatoes, beets, pepper, dill, vinegar, honey, tomato
- Simmer 30 minutes
