Ingredients :
- 2 small white potatoes
- 1/8 cup red onion
- 1 tbsp bacon grease
- 1 large mushroom
- 8 grape tomatoes
- 1/2 tbsp oregano
- salt
- pepper
Method :
- Cook bacon and set aside. Soak up most of the grease with a paper towel or use EVOO
- Slice grape tomatoes
- Slice mushroom
- Add to pan and cook down
- Slice red onion and potatoes. Be sure to slice potatoes small so they cook faster!
- Add to pan with salt, pepper and oregano. Mix through and cover.
- Continue to mix and cover until completely cooked. Check potatoes to make sure it"s done and serve.
- Hints: if you use EVOO then add salt at beginning. If you use bacon grease skip salt until you add potatoes and onion. You can even skip it then if you want.
- Hint 2: if you don"t have time in the am, you can slice onion and potatoes ahead and keep them (separately) in water until you cook them.
