Resep Peppery chicken with a plum glaze

Ingredients :

  • ◆◆◆◆◆◆◆◆◆◆◆◆ chicken ◆◆◆◆◆◆◆◆◆◆◆
  • 6 large chicken breast
  • 2 teaspoon fresh ground black pepper
  • 1/2 teaspoon salt
  • 2-1/2 tablespoons extra virgin olive oil
  • ◆◆◆◆◆◆◆◆◆◆◆◆ Plum Sauce ◆◆◆◆◆◆◆◆◆◆◆
  • 4 ripe black plums
  • 3/4 cup jaggery/ brown sugar
  • to taste salt
  • 1/2 cup butter

Method :
  1. Heat oil in a pan. Cut each breast in half lengthwise, making 12 breast portions.
  2. Add breast to oil add half salt and pepper to top side of chicken and cover.
  3. Turn the chicken after 7 minutes add rest of pepper and salt,. Cover and cook.
  4. The liquid will reduce and chicken will brown turn and brown the top side.
  5. Remove from heat covered.
  6. Peel the plums
  7. Remove the pits
  8. Cube the plums
  9. Heat butter
  10. Add plums
  11. After simmering 3 minutes add jaggery.
  12. Simmer till thickens
  13. Mash the plums a bit continue to let thicken.
  14. Pour on top of the chicken bring to a simmer stirring occasionally till chicken is evenly coated. Let rest 7 minutes and serve I hope you enjoy!
