Ingredients :

- 6 large chicken breast
- 2 teaspoon fresh ground black pepper
- 1/2 teaspoon salt
- 2-1/2 tablespoons extra virgin olive oil
- ◆◆◆◆◆◆◆◆◆◆◆◆ Plum Sauce ◆◆◆◆◆◆◆◆◆◆◆
- 4 ripe black plums
- 3/4 cup jaggery/ brown sugar
- to taste salt
- 1/2 cup butter
Method :
- Heat oil in a pan. Cut each breast in half lengthwise, making 12 breast portions.
- Add breast to oil add half salt and pepper to top side of chicken and cover.
- Turn the chicken after 7 minutes add rest of pepper and salt,. Cover and cook.
- The liquid will reduce and chicken will brown turn and brown the top side.
- Remove from heat covered.
- Peel the plums
- Remove the pits
- Cube the plums
- Heat butter
- Add plums
- After simmering 3 minutes add jaggery.
- Simmer till thickens
- Mash the plums a bit continue to let thicken.
- Pour on top of the chicken bring to a simmer stirring occasionally till chicken is evenly coated. Let rest 7 minutes and serve I hope you enjoy!
