Ingredients :
- 4 tbsp butter
- 2-3 small onion
- 1 tbsp brown sugar
- 1 tbsp worcestshire sauce
- 1 cup red wine
- 8 oz mushrooms sliced
- 3 cloves garlic
- 4 cups broth
- 1 lb pasta
- 2 bay leaves
- 3 thyme sprigs
- 1 1/4 cups heavy cream
- 6 oz gruyere cheese shredded
- 1/3 cups gorgonzola
Method :
- Heat butter in large pot. add onions and brown sugar cook until softened
- Slowly add wine and worcestshire sauce until onions are caramelized and wine has all evaporated
- Add mushrooms and garlic. Season and cook 3-4 min until mushrooms are soft
- Add chicken broth and bring to a boil.
- Add pasta, bay leaves and thyme cook until pasta is al dente
- Stir in cream, and cheese and cook til cheese is melted
