
Ingredients :
- 750 g chicken thigh fillet, 3cm pieces
- 1/3 cup caster sugar
- 2 small red chillies, sliced
- 2 cloves garlic, thinly sliced
- 1 Tbsp minced ginger
- 1 Tbsp fish sauce
- 1 bunch baby bok choy
- 1 head broccoli, into small pieces
- 1 cup raw unsalted cashews
- Vegetable oil for frying
- Rice to serve
- Sliced green onion to serve
- 150 g snow peas, halved diagonally
Method :
- Throw sugar and 1/4 cup water in a small saucepan. Stir over low heat for three mins to combine. Increase heat, bring to the boil (not stirring) for further 5 to 7 mins until mixture turns golden.
- In a large pot, boil your broccoli, snow peas and bok choy for three mins.
- In a large non stick fry pan, firstly toast your cashews and set aside.
