Ingredients :
- 2 cup rice
- 1 can kidney beans
- 1 can coconut milk
- 2 green onions
- 2 clove garlic
- 1 tsp thyme
- 1 1/2 tsp salt
- 1 tsp ground black pepper
Method :
- Drain liquid from beans. Add coconut milk. Make up to 4 cups water with fresh water.
- Put all ingredients except rice in pot to boil. Add rice when boiling.
- Boil two minutes then reduce to low heat for about 15 minutes until liquid is absorbed.
- Fluff and serve.
