Ingredients :
- 2 tbsp Olive oil
- 1 medium Onion
- 4 cloves garlic crushed
- 2 Chicken breasts sliced
- 1/4 cup White Wine
- 1 can Crushed Tomatoes
- 1 Chicken stock cube or bouillon
- 2 tbsp Water
Method :
- Ingredients
- Heat oil in a wok or large frypan
- Add the chopped onions and fry for 2 mins
- Next add the crushed garlic and fry for 1 minute
- Add the sliced chicken pieces also a little more oil 1 tblsp
- Fry chicken until it"s all white with no pink and brown the pieces a little
- Next make a well in the middle of the chicken and onions, and on a high heat add the wine. Let it bubble for 1-2 minutes then stir in the chicken from around the sides and let simmer for 10-15 minutes.
- Add the tomatoes and mix in then the tomatoes and mix and simmer for 2 mins
- Lastly add the chicken stock and 2 tablespoons water stir in then add the salt and pepper stir and simmer for a further 2 mins.
- If you want the juice a little thicker, add a teaspoon of tomato purΓ©e.
- I served sugar snap peas and small roast potatoes
