Ingredients :
- 4 chicken cutlets
- 1 large onion
- 1 box white large mushrooms
- 1 cup chicken stock
- 1 cup white wine pino grigio
- all purpose flour
- 2 tablespoons butter
- half cup olive oil
- salt & pepper
- 4 slices fresh mozzarella
Method :
- Salt & pepper cutlets & flour, then cook in frying pan & place aside
- In large skillet add 3 tablespoons oil & cook sliced onion & mushrooms with salt & pepper.
- When veggies are softened add butter & 2 tablespoons flour & make a rue. Then add stock & wine, salt & pepper & stir .
- Then add the cutlets with mozzarella on top & cover & simmer until cheese is melted & liquid thickens.
- Serve cutlets on top of bed of sauce with veggies.
