Ingredients :
- 3 tbsp butter
- 1/4 cup flour
- 1/8 tsp salt
- 1/4 cup sugar
- 5 tbsp sugar
- 4 large eggs, sperated
- 1 egg white
- 1/4 cup orange liqueur
- 1 tbsp grated orange peel
Method :
- Melt butter over medium heat in a saucepan. Whisk in flour and sugar
- Gradually add the milk, stirring frequently. Cook until mixture boils.
- Boil 1 min then remove from heat
- Stir in 1/4 cup of sugar. Whisk in egg yolks until well blended
- Transfer to a bowl and let cool for 30 min
- Stir in liqueur and orange peel
- Preheat oven to 375°F.
- Grease 10 6 oz ramekins and sprinkle with 3 tbsp sugar
- Beat egg whites and remaining sugar until stiff peaks form
- Fold 1/3 of egg mixture into milk mixture
- Then fold milk mixture into remaining egg whites
- Spoon into ramekins and bake until set about 30 min. Serve immediately
