Ingredients :
- 2 cup Cooked Chicken, shredded
- 3 cup rice
- 2 cup diced tomatoes
- 2 cup chicken stock
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1/4 cup cilantro
- 1 olive oil
- 1/2 cup red onion diced
- 1/2 cup shredded cheese, cheddar
- 4 each flour tortillas
Method :
- In a medium saucepan add onion and rice. Cook until browned about 5 minutes.
- Add all spices and combine.
- Add diced tomatoes, chix stock
- Cover, cook for 20 minutes.
- Add cilantro
- Place flour tortillas in a 8x8 pan, fill each tortilla with rice mixture
- Set oven 375°F Bake in in oven for 10 minutes
- Add cheese and Greek yogurt serve and enjoy
- Top will be crunchy
