Ingredients :
- 2 lb ground beef
- 1 onion (chopped)
- 1 tbsp olive oil
- 1 package taco seasoning
- 1 bag tator tots
- 1 can enchilada sauce
- 1 cup mexican blend shredded cheese
- Black olives (sliced)
Method :
- Preheat oven to 350°F
- Add oil to skillet over medium heat. Add onions & cook until tender. Remove to bowl and set aside.
- Add beef to skillet & cook until brown.
- Add taco seasoning & mix in. Remove from heat & drain.
- Add onions to meat mixture.
- Pour in enchilada sauce & mix.
- Pour into 9x13 pan & scatter tator tots over top, sprinkle with cheese & black olives.
- Bake uncovered for 15-20 minutes or until cheese is melted.
