Ingredients :
- 450 g spinach
- 450 g broccoli
- 1 onion chopped
- 50 gram butter
- 40 gram flour
- 1 liter homemade chicken stock
- 150 ml heavy cream
- 1 lemon zested
- 6 tablespoons greek youghurt for finish
Method :
- Sweat onion in butter under lid then add flout and cook out
- Add stock a ladle at a time, making it boil before adding next one.
- Add broccoli and spinach and cook for 15 minutes
- Put in blender and blend well
- Bring back to pot and season with lemon juice salt pepper and cream
- Present with some lemon zest and a dollop of greek yoghurt
