Ingredients :
- 2 tsp Olive Oil, extra virgin
- 1 lb boneless skinless chicken, chunked
- 1 Tbsp cornstarch
- 1/8 tsp Salt
- 1/8 tsp Pepper
- 2 cups fresh sugar snap peas
- 1 can frozen OJ, unprepared
- 2 tbsp soy sauce
- 2 tbsp fresh ginger, grated
- 1 jalapeno pepper, minced (de-seed half or more if you are sensitive to spice)
Method :
- Brown chicken in oil until cooked through, set chicken on paper towel to drain.
- Add the sauce mixed in step 1 to the hot pan, cook until bubbly over medium heat.
- Return chicken to the pan and add sugar snap peas
- Stir, reduce heat, simmer ~5-10 min or until peas are cooked to desired texture. If desired you can thicken sauce by crumbling gingersnap cookies in, be sure to stir well.
