Ingredients :
- 1 can new potatoes
- 1/2 Shallot chopped finely
- 6 thick slices of cucumber
- 1/4 cup Sweetcorn
- 5 cherry tomatoes halved
- 1/2 tsp lemon salt, or a squeeze of lemon and a pinch of salt
- 1/4 tsp ground black pepper
- 1 tsp Balsamic vinegar
- 1 tsp mint sauce
- 3 tbsp greek style yogurt or sour cream
Method :

- Stack the cucumber and slice through the cucumber slices. Then turn around and slice through again so as you have small chunky pieces
- Cut up the shallots small
- Empty the tin and rinse potatoes in cold water, pat dry and cut up the potatoes into chunky small pieces.
- Cut up the tomatoes into 1/4 pieces.
- In a bowl big enough to fit the ingredient in, add the potatoes and all the other ingredients. Stir carefully add the salt, pepper, lemon and mint sauce.
- Then add the yogurt or sour cream and the balsamic vinegar. Stir gently until all is covered.
- Then add the mix to a serving bowl and sprinkle with a little parsley dried or fresh.
