Ingredients :
- 1 cucumber cut into 1/4 in half moons
- 2 tbsp white vinegar
- 2 tbsp chopped fresh dill
- 2 tbsp olive oil
- to taste Salt and pepper
- 1/2 cup panko
- 2 tbsp horseradish
- 4 (6 oz) skinless boneless salmon fillets
- 6 oz spinach
Method :
- Preheat oven to 475°F
- Toss cucumber, vinegar, 1 tbsp dill 1 tbsp oil and salt and pepper together
- In another bowl combine horseradish, remaining dill, panko and oil.
- Place salmon on a baking sheet sprinkle with salt and pepper then top with panko mixture
- Bake until golden brown on top, about 8 min
- Toss spinach with cucumber, serve with salmon
