Ingredients :
- 2 cups chopped cooked chicken
- 1/2 tsp honey
- 3/4 tsp cumin
- 1 tbsp olive oil
- 3 tbsp chopped fresh mint
- 1/3 cup (1 1/2 oz) goat cheese
- 1 1/2 cups cooked Israeli couscous
- 4 bell peppers
- 1 tbsp lemon juice
Method :
- Cut tops off peppers and remove the inner seeds and membranes
- Broil peppers at 425°F until light charred on outside
- Peel the peppers
- Combine all other ingredients in a bowl
- Fill peppers with couscous mixture
- Broil for 4 minutes
