Ingredients :
- 1/4 cup extra virgin olive oil
- 1 tbsp crushed black peppercorns
- 1 1/2 cup pasta cooking water
- 1 salt to taste
- 2 1/2 cup grated Parmesan cheese
- 1 lb spaghetti noodles
Method :
- Bring a large pot of salted water to a boil.
- Add 1 pound spaghetti to the boiling water and cook according to package directions.
- Drain, reserving some of the pasta cooking water.
- Heat olive oil in a large heavy skillet over medium high heat.
- Stir in crushed black peppercorns and cook, stirring, until fragrant, about 1 to 2 minutes.
- Stir in the pasta and pasta cooking water.
- Slowly add Parmesan cheese and stir until the pasta is coated.
- Season with salt.
