Ingredients :
- 10 asparagus, woody ends snapped off
- 15 oz can of great northern beans, rinse and drain
- 1/4 onion, finely chopped
- 1/2 cup corn, cooked
- 1 cup coriander, chopped
- 2 Tbsp lemon juice
- 2 tsp extra virgin olive oil
- to taste salt and pepper
Method :
- Chop the onion finely. I usually buy yellow onions that have a strong flavour. When I use them with salad I spread them out on a plate for a while and the strong flavour fades.
- Boil asparagus 5-6 mins or until cooked. Cut into quarters.
- While boiling asparagus, cook corn if needed, and wash, dry and chop coriander.
- Place beans, corns, onion, coriander in a mixing bowl and combine with olive oil, lemon juice, salt and pepper.
- Add asparagus and combine. Put some more salt and pepper as you desire. Enjoy!
