Ingredients :
- 4 cups vegetable broth
- 14 oz lite coconut milk
- 1/2 cup shredded carrot
- 1/2 red onion, thinly sliced
- 1 tsp garlic paste
- 2 tsp ginger paste
- 1 tbsp red chili pepper paste
- 1 1/2 tbsp lemongrass paste
- 1 1/2 tbsp green curry paste
- 1 1/2 tbsp lime juice
- 1/4 tsp salt
- 1/2 tsp black pepper
- 2 tomatoes, chopped
- 1/2 lbs fresh spinach
Method :
- Add everything except spinach and tomatoes to stock pot. Bring to boil and simmer for 20 minutes.
- Add tomatoes and simmer 5 minutes.
- Serve over a small bunch of fresh spinach.
