Ingredients :
- 1 cup quinoa
- 1/2 onion, minced
- 2 cloves garlic, minced
- 3/4 cup Shredded spinach
- Olive oil
- to taste Cajun seasoning
- to taste Salt and pepper
Method :
- Put quinoa with 1 cup water in pot and bring to a boil. Reduce to a simmer and let cook for 15 minutes
- While the quinoa is simmering, heat the olive oil over medium-low heat and saute the garlic and onions until translucent. Season with salt and pepper.
- A couple of minutes before the quinoa finishes cooking, add the spinach and Cajun seasoning to the onions and garlic and saute, stirring constantly.
- When the quinoa finishes cooking, add it to the pan with the onions and spinach. Stir to combine, adjust seasoning to taste.
