Ingredients :
- 2 pounds medium shrimp (save shells)
- EVOO
- 1 pound andouille sausage, cut into rounds
- 2 green peppers
- 3 stalks celery diced
- 1 onion diced
- salt
- Pinch crushed red pepper
- 3 cloves garlic chopped
- 1 can (28 ounce) diced tomatoes
- 1 teaspoon cayenne pepper
- 2 cups rice
- 2 bay leaves
- 1 bundle fresh thyme
- 5 scallions (opt garnish)
Method :
- Make shrimp stock using shells and water. Bring to a boil, turn off let sit 15-20 mins
- Heat oil in large pot
- Brown sausage 4-5 mins
- Add peppers, onions, celery, season w/ salt and red pepper cook 7-8 mins add garlic cook 2-3 mins
- Add tomatoes, cayenne, rice, 4 ci[s shrimp stock, thyme, bay leaves, Bring to a boil, reduce to simmer and cook 25 mins
- Stir in shrimp cook 5-7 mins
- garnish with scallions
