Ingredients :
- 4 hard-boiled eggs, cooled and shelled
- 3 tbsp mayonnaise
- 1/2 tsp Dijon mustard
- to taste Salt and pepper
- Boston lettuce (to roll into a wrap if preferred)
Method :
- Chop the eggs and place in a bowl. Add the mayonnaise, mustard, salt and pepper. Mix well. Cover and chill. (334 calories/serving; GL=0, Glycals=0)
- Herbed egg salad: add to the mix 1/2 tsp dried tarragon or 1 tsp chopped fresh chives or flat leaf parsley.
- Egg salad with Cherry Tomatoes: add to the mix 1/4 c finely chopped cherry tomatoes and t tsp minced fresh marjoram.
- Egg salad and ham: add to the mix 1/4 c finely chopped baked ham
