Recipe Egg Salad

Ingredients :

  • 4 hard-boiled eggs, cooled and shelled
  • 3 tbsp mayonnaise
  • 1/2 tsp Dijon mustard
  • to taste Salt and pepper
  • Boston lettuce (to roll into a wrap if preferred)

Method :
  1. Chop the eggs and place in a bowl. Add the mayonnaise, mustard, salt and pepper. Mix well. Cover and chill. (334 calories/serving; GL=0, Glycals=0)
  2. Herbed egg salad: add to the mix 1/2 tsp dried tarragon or 1 tsp chopped fresh chives or flat leaf parsley.
  3. Egg salad with Cherry Tomatoes: add to the mix 1/4 c finely chopped cherry tomatoes and t tsp minced fresh marjoram.
  4. Egg salad and ham: add to the mix 1/4 c finely chopped baked ham
