
Ingredients :
- 1 lb green beans
- 2 chicken breasts
- 1 large carrot
- 2 medium potatoes
- 1 tomato
- 1 tablespoons tomato paste
- 2 cloves Chopped garlic
- If you wish chicken broth or water
- to taste Salt pepper
- 3-4 spoons vegetable oil
Method :
- Prepare veggies; wash and trim end of the beans, brush, and cut carrots and potatoes. Cut onions. Purée one tomato with garlic and 1 tbs of tomato paste. Now, heat 2-3 tbs of oil, add 1 onion and sauté until they are soft.
- Add chicken to the onions
- Sauté for a while until chicken is half way cooked, then add puréed tomatoes. Add some water in to your blender pour into the pan.
- I added some left over chicken broth, too.
- Now time to cook veggies with chicken.
- As you see my pot needs more water, maybe little less then half way of the veggies, so I added it. Don"t forget to add salt and pepper.
- Cook until water gets down to 1/4 of the pot or chicken is cooked.
