Ingredients :
- 1 chub ground chorizo (beef or pork)
- 8-10 eggs
- to taste salt and pepper
- 1 bag frozen tater tots
- 1 small sweet onion
- Sour cream
- 1 jar La Victoria hot sauce (mild or medium
- 1 bag (10 inch) tortillas
- Mexican blend cheese
- 3/4 cup milk
Method :
- Brown the chorizo in a large skillet
- Cook tater tots according to package directions
- Whisk together milk and eggs then add to browned chorizo in skillet. Cook till eggs are done.
- Add salt and pepper to your own taste.
- Finely chop sweet onion and add for 3 to 4 minutes to soften a bit.
- Heat tortilla by microwave or stove top
- Assemble chorizo mixture and tater tots in tortilla. Add sour cream, taco sauce, cheese, roll up the tortilla and enjoy.
