
Ingredients :
- 2 lb pork roast
- 1 T fresh dill; minced
- 2 t onion powder
- 2 t garlic powder
- 1 lemon; zested
- 1/3 C horseradish mustard
- 1 large pinch kosher salt & black pepper
- as needed olive oil
Method :
- Cover pork loin with enough oil to coat.
- Season both sides with onion powder, garlic powder, salt, and pepper.
- Roast at 350° for approximately 1 hour or until pork reaches desired doneness. Spread horseradish atop roast during last few minutes of cooking process.
- Garnish with lemon zest and dill.
