Ingredients :
- 6 medium tomatoes
- 2 tbsp grated Parmesan cheese
- 1 cup garlic/cheese croutons, crushed
- 4 tbsp butter, melted
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 chopped fresh parsley for garnish
- 2 tbsp grated cheddar or American cheese
Method :
- Cut a thin slice off the top of each tomato.
- Scoop out pulp, leaving a 1/2 inch shell.
- Invert onto paper towels to drain.
- Mix stuffing ingredients.
- Spoon into tomatoes.
- Sprinkle with the parsley.
- Place tomatoes in a metal baking pan.
- Cover tomatoes with foil to prevent over browning of stuffing.
- Cook on the grill or bake at 350°F for 30 minutes.
