
Ingredients :
- 3 cup Romain Lettuce, chopped
- 2 boneless, skinless chicken breasts
- 1 tbsp Red onion,diced (or to taste)
- 1/3 cup cherry tomatoes,halved (or to taste)
- 1/2 avocado, diced (or to taste)
- 3 Fresh grilled pineapple rings
- Salad Dressing
- 1/3 cup olive oil, extra virgin
- 1 Fresh lime juice
- 1 tbsp apple cider vinegar - or to taste (or any kind)
- 1/2 tsp honey
- 1 tsp Sriracha (or to taste)
- Chicken Marinade
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp dried onion powder (or flakes)
- 1/2 tsp Red chili flakes
- 1/2 tsp sea salt
- 1/2 tsp dried parsley
- 1 (or use Montreal chicken seasoning )
Method :
- Mix ingredients for marinade,and marinade chicken for 30 min -hour
- While chicken marinading, chop your veggies for the salad.
- Mix the salad dressing ingredients and whisk or blend together and set aside.
- Grill the chicken and pineapple slices. Grill until pineapple is golden and the chicken is no longer pink.
- Assemble the salad in a large bowl or plate. Dress with your salad dressing and enjoy!! 😊
