Ingredients :
- 120 ml plain yogurt, strained if possible
- 1 small cucumber or 1/2 large
- 1 small clove garlic
- 2 tsp lemon juice
- 1/2 tsp Salt
- to taste Pepper
- Olive oil to drizzle over
- to taste Cayenne pepper, cilantro, mint (optional)
Method :
- Remove seeds (if any) from cucumber and chop finely. Squeeze lemon for juice.
- Mince garlic as finely as possible.
- In a bowl, mix cucumber, garlic, yogurt, lemon juice and salt. Adjust lemon, salt, etc. to your liking if needed. You can use right away, but if you let it sit in the refrigerator for a couple hours, it will be more flavorful.
- When ready to serve, sprinkle over just a bit of black pepper, cayenne pepper, fresh cilantro etc. if you like. Drizzle over some olive oil and it"s ready to go!
- Goes awesome with falafel, grilled veggies, and all kinds of meat!
